Peanut butter cookies


These are so simple and so good...from Joanne Stepaniak's Table for Two.

1/4 c peanut butter
1/4 c real maple syrup
1/2 t vanilla extract
1/2 c whole wheat pastry flour

Preheat the oven to 350 and spray a cookie sheet with oil. Combine the first 3 ingredients in a small mixing bowl. Add the flour and mix together well. Form the dough into small balls and place them on the cookie sheet. Cook for 12 min.

They certainly are simple with only 4 ingredients! Are they crunchy or chewy?

They're chewy till they harden. They're best when they're warm...and...the batter is almost better than the finished product :)

Hi, Bearetette!! I've been lurking lately. Have you ever used non-pastry flour before, and/or know what happens if you don't?

I actually used regular old whole-wheat flour for this one...but figured I'd type out the recipe as written ;) It came out fine.
