Autumn minestrone from Pinterest. I made it in my new Dutch oven. For the first time, I added Parmesan cheese rind. It does seem to add dimension.

Alex is obsessed w/ adding parm cheese rind to soups and I agree - it really adds a lot!

Smart guy :) once it melted into a salty chunk in the soup...tasted good though
