I took a long bike ride today. About 15 miles. Most of it was on a path by the ocean (first sand, then paved). When I got home, I had 2 pumpkin waffles with maple syrup and strawberry Greek yogurt on top. It was very satisfying.
I just finished such a good book. It was called Vera Wong’s Unsolicited Advice for Murderers. The main character was entertaining and endearing. She finds a dead body on the floor of her Chinatown tea shop and starts investigating.
The kids and I went to Taco Box in Aventura and I loved it. Eric drove and it wasn’t harrowing. In fact, I don’t like driving in Aventura, so I was grateful to have a chauffeur. I had Baja style fish tacos and a strawberry margarita. We all shared guacamole and chips and churros with ice cream and chocolate sauce.
I was swimming with my youngest in the ocean when it started raining on us a bit. Then we turned and saw a huge rainbow arching across the sky. Unfortunately I didn’t have my camera. It was a beautiful sight though.
I just made the best bourbon salmon. I’ve never tried it before. If you’re interested, the recipe is here: https://www.myrecipes.com/recipe/bourbon-glazed-salmon-0
Eric and I made fresh fettuccine today and topped it with arugula ricotta pesto, cherry tomatoes, and feta. It was delicious, though he felt it was too creamy. We’re going to Massachusetts in a few days. I’m dreading the cold, but it will be nice to see family.
The kids stayed home today because of the hurricane. We made the best risotto. It didn’t have many ingredients, but it was fabulous. The rice was cooked in white wine and broth, then we added havarti and chopped cotton candy grapes.
Eric made the stuffed gnocchi from Trader Joe's. He cooked them in a mixture of butter and olive oil, and grated a bit of white cheddar on top. Delicious.
The kids and I saw Van Morrison last night. It was so good. The concert was held on a Seminole reservation, near a massive casino. I had some Chardonnay and the kids shared a huge Kit Kat. Everyone was happy 😊
